Item Caracterización física de café especial (Coffea Arabica) en el municipio de Chachagüí (Nariño, Colombia)(Corporación Universitaria Lasallista, 2015-08-24) Gamboa Rosero, Paola Yurani; Mosquera Sánchez, Silvio Andrés; Paz Narváez, Iván EnriqueObjective. Traditionally processed Coffee (Coffea arabica) of the Caturra and Colombia varieties from 19 farms from Chachagüí (Nariño, Colombia), was characterized. Materials and methods. The farms were selected and the cherry coffee was subjected to a traditional humid process. Then, three samples /farm of dried parchment coffee were collected to perform the analysis and the variables evaluated were mutually correlated, in order to establish the relationship degrees among them. Results. All of the farms met the criteria of humidity, peeled grain, strange matter and “guayaba” and “media cara” established by Federación Nacional de Cafeteros for dried parchment coffee, and for green coffee beans the only farms that had CBB and coffee defects percentages above the standards allowed were F3 (2.6 % and 9.5 %) and F1 (6.0 % defects); concerning the performance in the processing, the best values were those of F7 (85.5 Kg), F5 (86.6 Kg), F12 (86.8 Kg) and F14 (86.9 Kg), and the 19 farms had more than 75 % of sound green beans of coffee. The best percentage was that of F7, with 81.3 %, followed by F14, F5, F10, F12, F8, F18 and F11, with percentages between 80.6 and 80.0%, and the farms with the lowest values were F1 and F3, with 76.6 and 75.6%, respectively. Conclusions. The coffee from the area has the attributes to be considered as a especial coffee and participate in international auctions.
