Item El cerdo en la gastronomía antioqueña(Corporación Universitaria Lasallista, 2007) Arango Navarro, Fernando AquilesPork was introduced in Antioquia after 1530 when Jorge Robledo arrived, and it was accepted from that moment on, even by the Indians, in the diet of the region, first as fresh meat at the beginning and, later, prepared, as in the case of ham. Pork got more and more importance in the Antioquian feeding, especially from the XVIII Century, and it even became an essential component of the diet above cow meat. In the XIX Century, with the introduction of “Pará” ( Brachiaria mutica) and Guinea (Panicum maximum) cattle exploitation increases and, therefore, bovine meat improves its offer, fact that boosts its consumption due to the lowering of its price, displacing pork a little. Pork growth was made especially in the backyards of the houses, fact that required a law intervention de to its hygienic troublesome consequences. At the beginning of the XXth Century, pork is already regarded for many recipes and meals, and gets more important when the pork slaughtering becomes popular for every Christmas time. Nevertheless, as the century advances, pork with less fat is preferred due to health reasons, but its protagonist role does not decrease. The pork, with sausage and especially with chicharrón (fried pork skin) is a basic part of the ensign meal of the region: The Bandeja Paisa. Today, forage techniques have been improved in zones as Santa Rosa and La Unión, fact that allows the availability of healthier meats for consumers. Antioquia, nowadays, is the Colombian province with the highest consumption of pork meat, achieving three times the national media rate. He was first classified as a “costumbrista”, under a pejorative consideration and taken as a province writer, Carrasquilla was claimed an important author by Kurt Levy, in the ninety fifties, in his PhD thesis written in Canada. This work about Carrasquilla, who was born in Santo Domingo, Antioquia, was translated into Spanish in 1958. Carrasquilla has several references to the food and the beverages used in Antioquia, fact that allows the conclusion that he was a fan of regional gastronomy. His texts show that he loved chocolate, arepas (corn cakes) stuffed pork, beans and bacon, chorizos (sausages), morcilla (pork intestine filled with blood, rice and spices), Christmas food, candies and, in general, all of the cultural expressions related to gastronomy.Item Origen y la evolución de la comunicación organizacional en Antioquia, a partir del testimonio de algunos de sus protagonistas.(Corporación Universitaria Lasallista, 2011-05-30) Arango Navarro, Fernando Aquiles; Pulgarín Restrepo, Luisa FernandaAbstract: Introduction. This research work about the history of organizational communications in Antioquia aims to get and keep the testimonies of people who have experienced, very closely, this process, and whose declarations are very valuable to understand how communications have evolved in Antioquian companies. Materials and methods. A history of organizational communications in Antioquia has been built by the use of in-depth interviews, made to six protagonist people in the history of communications in the region. The materials were chronologically organized in decades, because the testimonies were spontaneously expressed that way by the people interviewed. The interviews allowed a construction and an understanding of the evolution of organizational communications in Antioquia, differentiate some important milestones and define some findings and conclusions. Results. In Antioquia, organizational Communications were initially boosted by the industrialization that took place in the 60´s decade, which implied the integration of communication professionals who were getting graduated from universities in those times. In this region, organizational communications had, since their beginning, two currents: One focused on public relations, with a preference for external stakeholders, which was finally addressed towards advisory and consultancy processes in the organizations, and another that initially worked with external stakeholders, especially mass media, and later started to work with internal stakeholders. It evolved to a point in which it became a part of strategic positions in the organizations, and its practitioners became one of the decision makers in them. Organizational communications has also evolved in the way they are assessed, from very basic ways of evaluation to achieving impact indicators for communication strategies based on the stakeholders´ perception of the attributes and contents transmitted through the media available. Conclusion. Organizational communications have evolved from being a support activity, especially to send information to mass media, to a current situation in which communication in companies are seen as a critical factor for success, given the high competition levels in the markets and the necessity of strategic views this fact brings; The search for new markets, which requires a knowledge and a definition of new audiences; The changing behavior of consumers; The necessity of keeping employees motivated and trained and the new challenges brought by economy cycles, among many phenomena.Item Perfil del guerrillero que regresaría de la ilegalidad en la selva a la legalidad(Corporación Universitaria Lasallista, 2018) Arango Navarro, Fernando Aquiles; Arango Navarro, Delio DavidIntroduction. This paper stems from an investigation to characterize the political kidnapping by the FARC in Colombia. Objective. To Develop the profile of the guerrilla who would succeed the legality if the peace process between the Colombian government and the FARC. Materials and methods. It is a descriptive exploratory research based on content analysis, from the reading of seven books whose authors were victims of political kidnapping by the FARC. Results. The guerrilla reaches almost always very young squad, hunger, fear, need or belief; It is inserted in a rigid and vertical organization structure, whose ideology is easily indoctrinated, because almost always come poor, will cove that speech. It fits almost always easy to the jungle, but develops insensitivity to people's lives, even animals. The bosses are authoritarian, whimsical and high interference in everyday decisions of guerrillas and hostages. Conclusions. The guerrilla fighter would return to legality she is young, with low or average academic level, but high level of indoctrination; very resourceful in everyday life; used to obey and logic to support their decisions on arms.
