Abstract
Antioqueña de porcinos S.A.S. with its brand porcicarnes is a company dedicated
to the commercialization, production and manufacture of pork products of absolute
confidence.
The products that are processed in the meat derivatives plant are of very high
quality as they are recognized by themselves and by many consumers.
The present work is a detailed report that shows in detail the variables that can be
considered at the time of standardizing and following the process of elaboration of
products, these variables are carried out both in the production process up to the packing
stage, which shows the company the importance of taking into account the variables for
the reduction of costs and how these can influence the final product.
To this end, the company carried out a continuous monitoring process, which
follows certain products that are of utmost importance to the company and that must be
followed from their preparation in the production area.
