Abstract
This chapter describes the main chemical substances
contained by the waste generated in citrus´ industrialization. An especial emphasis is given for carotenoids, fixed and essential oils, flavonoids, limonoids and
pectin. Finally, applications of these components for
the livestock, pharmaceutical, alimentary and environmental sectors are also described.
