Efecto del recubrimiento a base de almidón de yuca modificado Sobre la maduración del tomate

Abstract

Introduction. The tomato is a perishable product that requires treatment to prolong life, such as the use of coatings. Objective. The effect of the application of an edible cover base don yucca starch (Manihot esculenta Crantz) on the weight loss, respiration rate, firmness and Brix degrees of long life tomato (Solanum lycopersicum) under environmental conditions, was evaluated. Materials and methods. A random experimental design was used to value the treatments (T1= witness sample, T2= with a 2% of starch, T3= with a 3% of starch and T4= with a 4% of starch) which sampling was made every two days during a 22 days period, making three replicas and three repetitions in each treatment. Results. The results obtained were submitted to a univariate analysis of variance, by the use of the SPSS 11.5 software and, later, the Duncan test was practiced for the statistic media comparison. Significant differences between variables were found, and T4 turned out being the most appropriate treatment followed by T3, which responses in the delay of the maturation and the keeping of the quality conditions of the fruit were appropriate during a longer conservation time, 4.64% of weight loss and maintenance of the firmness between 2.54 and 8.91N until the 22nd day Conclusion. The covering with a 4% of starch was the most effective one.
